The vines are located between Béziers and Nîmes, this extended area offers a large diversity of terroirs (clay-li mestone soils, stony terrasses, rolled pebbles).

Vinification & ageing

Night harvest. Night harvest. Upon receipt, destemming and crushing, cold pre-fermentation maceration in temperature-controlled stainless-steel vats to extract colour and aromatic precursors, Fermentation with temperature control (20-25°C), gentle pumping over and racking. Short vatting. Running off and pressing of the marc, assembly of drops and presses, malolactic fermentation. No fining, aging in vats.

Sensory Palette: Gourmand, Rond

Visual: Dark purple colour with gamet

Olfactory: Notes of black fruits, blackcurrant, pepper, undergrowth

Gustatory: Great material, melted tanins, supple, round

Serving temperature: 16-18°C

Merlot

Native to the Bordeaux region, its name refers to Merle, the French word for blackbird because of its color. Particularly rich in anthocyanins, Merlot has a high color intensity, resulting in dark, dense wines with a deep purple-red color. In warmer regions, it offers an aromatic palette marked by notes of black and red fruit, and develops aromas of plum, black cherry and blackberry. With age, wines made from Merlot develop aromas of jam, licorice and undergrowth. This variety is often blended with Cabernet Sauvignon or Cabernet Franc. Merlot is grown all over the world and is one of the best-known grape varieties.
