Vines are located between Béziers and Nîmes. This extended area offers a wide diversity of terroirs (clay-limestone soils, stony terraces, pebbles).

Vinification & ageing

Night harvest. At their reception, destemming and crushing, inerting and cold prefermentation maceration. Fermentation with temperature control (20-25°C), gentle pumping over and racking. Short vatting. Run-off and pressing of the marc, blending of the drops and presses, rapid malolactic fermentation. No fining, microbiological stabilization via tangential filtration. Aucune adjonction de sulfites durant tout le process de vinification. Bottling: Use of a screw cap allowing a perfect sealing necessarLJ to preserve a wine without sulfites.

Sensory Palette: Complexe, Charnu

Visual: Dark purple color, garnet reflections

Olfactory: Complex nose, empyreumatic notes, blackberry, vanilla, ripe fruits

Gustatory: Beautiful motter, round, silky tannins

Merlot

Native to the Bordeaux region, its name refers to Merle, the French word for blackbird because of its color. Particularly rich in anthocyanins, Merlot has a high color intensity, resulting in dark, dense wines with a deep purple-red color. In warmer regions, it offers an aromatic palette marked by notes of black and red fruit, and develops aromas of plum, black cherry and blackberry. With age, wines made from Merlot develop aromas of jam, licorice and undergrowth. This variety is often blended with Cabernet Sauvignon or Cabernet Franc. Merlot is grown all over the world and is one of the best-known grape varieties.
