Vines are located in the Aude region on clay-limestone and gravel soils. The climate is cool, influenced by the proximity of the Pyrenean mountain range.

Vinification & ageing

Night harvest of the grapes. Destemming, crushing, vatting, cold prefermentary maceration for a few days. Pumping over, punching down during the vinification phase under temperature control (20-25°c). Marc pressing, separation of free run juice and presses. Aging in stainless steel tanks. Fining : No. Filtration: Tangential.

Sensory Palette: Fin, Gourmand

Visual: Cherry colour with ruby reflections

Olfactory: Intense aromas of morello cherries, peony, sweet spices

Gustatory: Fruity, generous, punctuated with vanilla notes

Serving temperature: 10-12°C°C

Pinot noir

Originally from Burgundy, Pinot Noir is a red grape variety, which produces red, rosé, still and sparkling wines, not very productive but very qualitative.When young, Pinot Noir red wine develops notes of red fruits, progressing towards spicy and empyreumatic notes. When it ages, it develops notes of candied fruit, kirsch and jam.It is renowned for adapting to other terroirs beyond French borders. This grape variety is one of the most widely planted varieties in the world.
