Vinification & ageing

Night grape harvesting. Light skin maceration, gentle pressing in a pneumatic press. Cold static clarification. Cold static clarification. Fermentation with temperature control (16°C). Aging on fine lees. Fining: Pea protein and Bentonite. Filtration: Tangential.

Tasting notes

Sensory Palette: Aromatique, epice

Visual: Light yellow color, with golden highlights

Olfactory: Rose, litchee, acacia notes

Gustatory: Fresh, aromatic, evoking sweet spices

Serving temperature: 8-10°C

Gewurztraminer

Originally from Alsace, Gewurztraminer is a highly expressive, aromatic white grape variety. This grape variety produces fragrant, full-bodied wines with exotic aromas and a smooth texture. When young, wines made with Gewurztraminer have aromas of spices, lychee, gingerbread and flowers such as rose. With a later harvest, this variety develops more diverse aromas, such as apricot and honey. 20% of Alsace’s vineyards are planted with Gewurztraminer, just behind Riesling, which occupies 23% of cultivated land. This variety is also found in Eastern Europe.
