Vines are located between Béziers and Nîmes. This extended area gives a wide diversity of soils (clay-limestone soils, stony terraces, rolled pebbles).

Vinification & ageing

Harvested at night to avoid any oxidation of the grapes and to keep a maximum of freshness Gentle pressing in an inert pneumatic press. Cold static clarification. Low temperature fermentation (15-16°C). Aged on fine lees. Fining: Pea protein and bentonite. Filtration: Tangential.

Sensory Palette: Fleshy

Visual: Bright golden yellow color

Olfactory: White peach, apricot, violet, sweet spicy notes

Gustatory: Voluptuous, aromatic, reminding honey and spices

Serving temperature: 8-10°C

Viognier

Mainly native to southern France, Viognier produces white wines, often as a single varietal. It can be blended with Chardonnay to enhance its aromas. It is very common in the Rhône Valley. Wines made with Viognier develop aromas of apricot, quince, violets and almond blossom. They have a slightly unctuous texture, revealing notes of dried fruit or acacia honey. This grape variety is very present in the Condrieu and Côte Rotie appellations, blended with Syrah. It is one of the world’s rarest and most unique white grape varieties.
